The Lavado Method: Unlike fermented cacao, these beans are washed and sun-dried immediately after harvest. This wonderfully straightforward approach preserves the cacao's natural intensity, deepens its bitter complexity, and retains considerably more flavanols, antioxidants, and theobromine than conventional processing. Splendid stuff, really.
